Sadly smart appliance companies have the ability to sue and imprision you if you make workarounds for their proprietary garbage EVEN if they end-of-service them. But without a name I have no clue. Try searching the brand on Github and see if there is something there. It's easiest if there is a slot for an SD card or USB, but ultimately someone has to figure it out. Disconnecting it from the Internet might work if the company is retarded, but unlikely. Could try guessing an admin/developer login like admin 0000. Not my area of expertise unfortunately

What does it even do? Is it just an electric motor spinning some blades or something, perhaps a heater plus a lot of circuitry to spy on you 247? Who cares about the program? Salvage the hardware. Once you remove every shit and leave only the moving parts, all the program does is control what moves when, and at that level, it would be agreat technology thread about microcontrollers (beyond 99% gentoomen's capacities) so you could also vibecode it. It's freaking simple: move this prt for X seconds, then move that part for Y, etc. Arduinofags and the like can help (but they're at most 1% of /g/).
Does it boil foods too? I know Tefal has a blender that can vacuum the bowl, vacuum other stuff, comes with two bowls (glass and triton plastic), and can heat stuff and boil soups.
I'm happy with my less fancy vacuum blender, and I'd just get a bread machine (knead and bake automatically, cost $60) if I wanted kneaded dough.

It can get up to 120°C. The TM6 is capable of 160°C but that's locked into specific recipes.
The TM7 can apparently do 160°C whenever you want.
What's useful is that you get fine control over the temperature so for instance you can set it to 60° if you want to pasteurize.
I've broken multiple bread machines, those things aren't designed for daily use. I use a Bosch MUM for kneading.

Kinda fun. I've an induction stovetop, a water kettle and two kinds of heatplates (mag stirrer and big bed) that have per degree temperature control. It's a very useful tech.
But a new blender to avoid the work of doing blend -> put on stove? lol. It can't do vacuum blending either, that's a downgrade.
I've seen my parents go through 2 bread machines in 5 years, but they were $60 machines used to make a small bread a day so eh... they're great if you only want "a bread a day, minimum effort".

The main appeal is the ability to mix and heat at the same time. A mag stirrer isn't going to work well with lower viscosity contents.
Choux, custards and the like work very well.
As a blender it's fairly powerful and capable of grinding nuts and grains.
The biggest problem of the one device for everything approach is that you constantly have to switch the contents and potentially even clean the mixer.
I wouldn't pay €1500 or even 500 for one either.

I'm fairly certain the Aldi knockoff version can run completely offline and costs a fraction

you'll need some kind of serial device (uart or whatever, probably visible on the PCB what you need) and it'd help to have a little devboard with the same chip that you're working on, so you can try putting the dump on that and test with less risk of bricking your shit.
or desolder the micro and either replace it with fully custom software, or leave it off and replace it with a new little control panel and go fully manual control.

fyi aldi just buys what's value-for-money when including shipping costs, that's why they sell local foods too. they don't produce any goods, some stuff they have a regular whitelabel supplier for but they just picked a name (all their pseudo brands like "milbona" made up at the regional aldi coffee corner) and maybe provided designs for the packaging. maybe not even that.
